The 2021 Casa Alle Vacche Chianti Colli Senesi is sangiovese dominant, with smaller amounts of canaiolo, colorino and ciliegiolo. Fermented and aged in stainless steel in order to showcase its lively fruit characters, it has aromas and flavors of floral-tinged black and red berries and red cherries with accents of savory herbs. Firm tannins soften with a brief time in the glass, revealing a medium-bodied, velvety-smooth palate. This wine will pair beautifully with a myriad of foods - pasta, pizza, burgers, steaks, and chicken - but is gloriously good all by itself, too.
