PRODUCT OVERVIEW:
Seven Springs Vineyard has a brief but illustrious history. Originally planted in 1980 by the MacDonald family (they are pretty famous among farmers and winemakers in Oregon), it has been overseen by the likes of Mark Vlossak of the Willamette Valley and Dominique Lafon from Burgundy, both legendary winemakers. Since 2014 the vineyard has been under the care of two former chefs whose passion for wine became a vocation. Sashi Moorman and Rajat Parr both worked in various sectors of the wine industry before making the leap to winemaking. Their love for terroir-driven pinot noir and chardonnay led them to this pristine vineyard site; indeed, this is the only Evening Land estate vineyard. 

Today's Chardonnay is sourced from Burgundian clones rooted into a rockier section of the Seven Springs mid-slope, which plays into the texture and final flavor profile of the wine. Fermented and aged in French oak barrels (30% new) for 12 months followed by six months in steel tanks prior to bottling, it has flavors of yellow and green apples, white flower petals, lemon zest, cream, and hints of warm baking spice that lead to a soft, palate-coating finish. "Accessible genius. This wine makes a spectacular entry point for the range. The grapes are whole-cluster pressed directly into casks for fermentation on native yeasts. The vines are primarily south-facing, and those for this bottling are predominantly younger vines.....overall, the profile is nicely lemony fruit with more wood here.
