The Shaw + Smith winery consists of two vineyards in the Adelaide Hills, Balhannah and Lenswood, totaling 55 hectares. They are each planted to varieties that perform particularly well in their respective micro-climates and soils: Pinot Noir and Sauvignon Blanc succeed in both sites, while Shiraz thrives in Balhannah and Chardonnay flourishes in Lenswood. In addition to site selection, Shaw & Smith use a number of different cultivars or ‘clones’ of each grape variety, which contribute different qualities to the final product.
Fermented with wild yeasts in a combination of new and seasoned French barrels, with malolactic fermentation partially carried out as well as lees-aging, today's Chardonnay is exceptionally well-balanced. It has "a beautifully complex nose showing lemon, apple and white peach along with biscuit notes. The palate displays elegance and restraint with an extra dimension of creaminess through the finish. It is a wine of depth and concentration that balances generous fruit flavors with savory characters and crisp acidity."
