Château Sainte-Eulalie is nestled in the heart of La Livinière, between Narbonne and the Medieval town of Carcassonne. 40 hectares of terraced vineyards, with vines that average 25 years in age, are planted to syrah, grenache, cinsault, and carignan. La Cantilène is the winery's flagship wine and is named after Canticle of Ste. Eulalie, the oldest known poem in the French language.
Proprietors Laurent and Isabelle Coustal lovingly tend to their vines without manipulating them; they take a backseat in the winemaking process, knowing that the terroir is the ultimate determinant of the quality of the finished wines.
Today's wine is a blend of syrah, carignan, and grenache that bursts from the glass with aromas of red and black fruits that follow on the lushly-textured, full-bodied palate. Accents of baking spices, licorice, and wet stone add complexity to the ripe, fleshy fruit characters; tannins are firm yet pliant, adding structure without detracting from the wine's silky mouthfeel.
