The Saint Chinian AOC has the longest winemaking history in the Languedoc-Roussillon. Indeed, wine has been made here since ancient times, when the Romans occupied southern France. The soils, composed of shale, clay and limestone, the Mediterranean climate and the moderating influences of the sea and the Massif Central plateau compose a terroir that brings forth wines of impeccable character and balance. The wines are hearty, with generous fruit flavors tempered with terror-driven characters.
Today's wine is a blend of 40% Mourvèdre, 30% Syrah, and 30% Grenache. Medium-bodied, it offers aromas of red fruits, licorice, and herbs that lead to a palate of brambly red cherries and raspberries. Accents of licorice, sagebrush, tobacco, and black pepper unfold on the palate. The tannins are firm but pliant; bright acidity carries the wine to a long finish.
