Viticultural Features:
The current average age of the vines today are over 27 years. The vineyard is situated on three gently rolling hills. Red varieties (Tannat, Cabernet Sauvignon, Merlot, Malbec & Syrah) are planted on mainly clay-limestone soils. This unique blend is a reflection of the fact that Gascony is located at the crossroads between Bordeaux/South West France and the Rhone/Languedoc.
Winemaking Techniques:
Upon harvest, the grapes are very carefully de-stemmed and crushed, before being transferred to stainless steel vats where each variety is vinified separately. The grapes are left to macerate for a short while and the lightly colored must is then run off, producing a delicate rosé by the saignée method. The unfermented grape juice is vinified at low temperature. Once the alcoholic fermentation is complete, the wines are left on their lees to maximize the primary fruit aromas.
