The Bouchon family, originally from Bordeaux, has been making wines in Chile for over 120 years and four generations. They are a family of winemakers that put all their energy and passion toward making special wines. Foye is produced only with grapes from Bouchon ́s vineyards, which are located between the slopes of the Coastal Mountain range and the alluvial terraces of the Maule Valley, one of the most traditional wine regions in Chile. They have a temperate, Mediterranean climate producing highly expressive, fruity wines as a result of the hot summers and drastic temperature changes from day tonight.
Proprietor and winemaker Julio Bouchon produces this wine from 100% Cabernet Sauvignon grapes from 25+ year old vines grown at lower elevations amongst the fertile valley carved out by the Maule river. Grapes are grown sustainably, but many plots are in fact farmed organically. Fermentation takes place in stainless steel for 12 days at temperatures between 79-85F. Selected neutral yeast is used to control for the warmer fermentation temperature. When all things are considered, the viticultural and winemaking practices utilized by Mr. Bouchon are consistent with those used in producing wine at a much higher price point.
When pouring the 2017 Foye Cabernet into your glass, you will notice the aromas of rich blackcurrant and huckleberry notes on the nose, which then turn to more dark cherry, blackberry and plum on the palate. The wine is medium bodied, making it a great all purpose red for those warmer summer months when burgers, tips, and brats are the dining options of choice. This is not a blockbuster Napa Cab, nor is it trying to be. It is easy to drink, but still packs a punch in flavor and structure.
