Wahluke Slope grapes typically ripen early in the region's warm conditions, which allows for increased hang-time to develop the natural complexity in the fruit before it is picked. The rich character ingrained in the whole fruit allows the varietal flavors to shine through without a complicated blending process. Seven Falls Cellars wines honor these traits by crafting primarily mono-varietal wines.
The 2014 Seven Falls Cabernet Sauvignon is crafted from 100% Cabernet Sauvignon sourced exclusively from various vineyards within the Wahluke Slope AVA. Malolactic fermentation was carried out in stainless steel tanks and oak barrels; the wine was aged in a combination of new and neutral French and American oak barrels for 15-18 months. It is an elegant yet powerful expression of the varietal, with aromas and flavors of blackberries, cherries, and plums, layers with notes of coffee, cocoa, savory herbs, and sweet baking spices.
