Cold winter nights may inspire you to reach for a nice bottle of whiskey or cognac for a night cap, but don’t forget the joys of a luscious and nuanced aged rum.
This week’s spirits special is a beautiful Venezuelan rum from Ron Carupano that is blended with rums aged up to 21 years. Venezuelan rum has established an esteemed reputation in the spirits world, and Carupano has been involved in the business for a hefty 250 years. Aging their fine spirits in used white oak bourbon barrels in their unique microclimate rapidly imparts great depth into their rums, creating a balanced spirit well worthy of winter sipping.
Destilería Carúpano is located on the fertile, hot and muggy estate of Altamira within the Carúpano Valley in the eastern Venezuelan state of Sucre, which unsurprisingly translates to “sugar.” The distillery was founded by A Spanish captain named Felix del Fierro in 1762. The captain was a pioneer in the realm of Ron Anejo, which is not a regulated designation but simply a term for aged rum. Today, Carúpano is produced by the only female Master Blender in the country, Carmen Lopez de Bastidas, who's been devoted to the development of unique flavor profiles and products for the past thirty years.
A number of characteristics and conditions contribute to what makes Carúpano a prestigious aged rum. The hot days and cool nights of the region produce sugar cane with a very high sucrose content and consequently an excellent quality molasses. Following fermentation, these rums are distilled in both column stills and pot stills, creating a dynamic smooth and rich flavor profile when blended together.
Once distillation is complete, dramatic daily oscillations in temperature help to expedite the aging process. The rum expands and seeps into the pores of the barrels during the hot days and shrinks during the cool nights, allowing the distillate to flow back out of the wood along with extracted flavor compounds.
The unique effects of this climate would equate the maturation of a scotch whisky aged for twelve years to that of a Carúpano rum aged for four years. Venezuela also has an official designation for the Denomination of Controlled Origin for Venezuela Rum. The DOC mandates that rums sold with this label are made solely with Venezuelan molasses and no artificial additives, aged at least two years in closed barrels of white oak, and bottled at a final proof of at least 80.
