The Ca’del Laito is a southwest-facing vineyard that straddles the ridge above Quintarelli at an elevation of 900-1300 feet. Tommaso purchased the vineyard from the Masi family in 2002. The vineyard is planted to Corvina, Corvinone, Rondinella, and Molinara along with several other ancient varietals. The old vines here are trained in the traditional pergola style. No chemical treatments are used in the vineyard, and all grapes are hand-harvested. Tommaso claims it is the Corvinone that gives his wines their depth. He calls it the "Super Corvina," saying that it produces stronger, denser, richer, more perfumed wines.
Once the grapes are brought into the cellar, Tommaso and his son Paolo press the grapes and ferment the must with selected yeast for ten days. The wine is then allowed to re-ferment on the skins of Amarone for another ten days. Aged for 17 months in second passage 700-liter Austrian oak, the finished result is one of the most distinctive wines of Italy, a top-notch Valpolicella Superiore Ripasso.
The Ca del Laito Valpolicella Superiore Ripasso is made in the bold, Ripasso style and highlights the quality of Tommaso's raw materials. This is a showy red wine with loads of personality and tons of robust fruit. A blend of 60% Corvina and Corvinone, 30% Rondinella, and 10% Molinara and other varieties, it has a nose of brooding black fruits that gives way to a velvety-textured palate bursting at the seams with cassis and black raspberry jam. The luscious fruit is layered with hints of vanilla and wet stone; bright acidity brings it to a long finish.
