Domaine Laroche is directly linked to the history of Chablis. One of the most respected and largest landholders in the appellation, Domaine Laroche owns 90 hectares of vineyard situated among the best crus. Its headquarters, the Obédiencerie of Chablis, has a history that dates back to the Middle Ages when the Canons of Saint Martin of Tours were making wine. Saint Martin’s relics were hidden in the Obédiencerie for a decade. Domaine Laroche still ages some of its cuvées in these historical cellars. Its wines are a testimony of 1000 years of history as well as the estate's reverence for terroir.*
The "Saint Martin" is a blend of the best plots of Domaine Laroche's vineyards in the Chablis appellation; the vines average 30 years of age. All plots are located on Kimmeridgian limestone soil with a west to northwest orientation. The grapes are fermented in stainless steel for 3 weeks, then aged "sur-lie" in a combination of stainless steel tanks and oak foudres for 8 months. Minimal filtration is used in order to preserve the wine's flavors.
Brilliant pale yellow in color, the "Saint Martin" has aromas of citrus fruits and flowers. Lemon peel, apple, and flinty wet stone dominate on the palate, displaying the wine's Kimmeridgian roots. It finishes long and clean, with subtle notes of saline, cedar, and tangerine.
