Domaine de l'Aumonier is owned and operated by Thierry and Sophie Chardon and is situated in the village of Couffy in the south of Touraine, on the slope of the Cher in the heart of the Loire Valley. The estate was founded in 1996 and is named after Sophie's grandfather. They began with 10 hectares of vines and have now accumulated 47 hectares. 26 hectares are located on slopes around Couffy, on soils of clay and flint. The other 21 hectares are spread around the village of Mareuil sur Cher, on soils of chalk and clay.*
Today's wine is a beautifully-crafted Sauvignon Blanc that displays its roots and belies its price. Fermented at low temperatures and aged for a short time in the bottle in order to preserve the grapes' fresh fruit characters, it is sunshine in a bottle. Aromas of citrus fruits lead to a palate bursting with lemon peel along with notes of apples and white peaches undercut by hints of wet stone. Vibrant acidity cuts through all that luscious fruit, providing balance and bringing the wine to a long finish.
