PRODUCT OVERVIEW/REVIEW:
Cava is made in the DO of Cava in Penedès, in northeastern Spain’s Catalonia region, not too far from Barcelona. It is crafted from Spanish varietals Macabeo, Xarel-lo, and Parellada but is made in the “méthode traditionnelle”. Just like Champagne, it undergoes its primary and secondary fermentations in the bottle.

The Barcino winery has the most vineyard holdings in the Penedès region; their Cava is made with the best 40% of their estate-grown grapes. Fermented in the bottle and aged for 12 months on the lees before release, it is the best of both worlds, delivering top-notch bubbles for a fraction of the price of a non-vintage Champagne. Attractive notes of honeyed brioche, poached pear, and caramelized grapefruit jump from the glass of this zesty, exceptionally well-crafted Cava.*
