"Bread & Butter" refers to two aspects of winemaking that are the hallmarks of its quality and popularity: oak aging and malolactic fermentation. Oak aging lowers astringency, adds richness and texture as well as flavors that can be associated with bread - toast, vanilla, nuttiness. Malolactic fermentation is the process by which malic acid is converted to lactic acid. This process creates softness and richness reminiscent of butter. Together, these practices bring forth wines with richness and secondary flavors that compliment and enhance the fruit characteristics of the grapes.
The 2016 Bread & Butter Chardonnay is sourced from two different vineyard locations: Carneros in Sonoma, where the grapes are known for their bold, rich fruit characteristics; and Arroyo Seco in Monterey, where the fruit lends floral and tropical notes. These complimentary flavor profiles, along with oak aging and malolactic fermentation, have resulted in a wine that is greater than the sum of its parts. The wine opens with rich notes of vanilla bean and almond cake. The creamy texture is balanced by tropical and citrus fruit characters and a hint of minerality. Orange-tinged spiciness emerges on the long finish, along with refreshing acidity.
