PRODUCT OVERVIEW:
Domini Veneti is the name of premium cuvées made by the historic Cantina Valpolicella Negrar cooperative. Established in the 1930s, the coop consists of 230 growers and is considered to be one of the best in The Boot. Domini Veneti wines are made from fruit sourced exclusively from the Valpolicella Classico appellation; many of the vineyards are organic. Daniele Accordini is the current winemaker and has upheld the high standards set by his predecessors.
Today's wine is a blend of corvina, corvinone, and rondinella grapes that are dried à la appassimento* for 60 days before vinification. Aged in large oak casks, the wine is rich and full, with aromas of cherries and vanilla and a velvety smooth palate redolent with notes of blackberries and cherries laced with baking spices and the merest hint of wet stone on the long finish.
Balancing acidity keeps the wine light on its feet.
