The craftsmanship of "The Dome" Chardonnay makes it appealing to wine lovers all along the Chardonnay spectrum. 66% of the wine was fermented in stainless steel tanks and moved to barrel halfway through the fermentation process. 38% of the grapes were fermented in new Burgundian wine barrels and 28% in older barrels. It spent 10 months on the lees, which added flavor and structure to the final wine. 30% of the wine was fermented spontaneously and without the addition of yeast in barrels. This balanced approach to vinification made an incredibly well-balanced wine. It offers aromas and flavors of pineapple, melon and orange blossom and a rich palate with a caramel, nutty undertone that lingers on the textured, decadent finish. The natural fermentation provides a vibrant, linear acidity that lends balance and structure.
