Today, we're highlighting a trio of 90 proof whiskeys from Redwood Empire out of northern California: Pipe Dream bourbon, Emerald Giant rye, and Lost Mountain blended whiskey.

Each of these spirits is a curated blend of house distilled and sourced whiskeys aged four to twelve years. Redwood Empire follows an environmentally sustainable approach in all of their production methods in an attempt to create a true collaboration between man and nature. The great John Muir, an early advocate for the preservation of our natural surroundings in this country, is one of their primary inspirations and is honored by planting a tree for every bottle of whiskey sold.

Though you'd generally associate Sonoma and the Russian River Valley with the wine industry, Redwood Empire has been working hard to change the narrative. Geographically, the Redwood Empire extends from San Francisco north to the southern border of Oregon, encompassing vast regions of uniquely indigenous trees that are some of the tallest on earth. Redwood forests subsist in a perfectly balanced ecosystem where every element works in harmony, and Redwood Empire has worked to embody this mantra in their company philosophy.

Every bottle features woodcut art depicting caricatures of John Muir and a specific redwood tree that was the inspiration for that whiskey's name. Many wild stories abound about John Muir, including climbing a 100 foot tree in a thunderstorm, but his lasting legacy was a love for nature equalled only by a love for humanity.

Redwood Empire's owner, entrepreneur, and wine enthusiast Derek Behnam planted his proverbial roots in Graton, CA in 2016. Graton Distilling Co. started out offering gin and vodka, but never afraid to go out on a limb, branched out to the world of whiskey several years ago.

Okay, no more tree puns. In their current productions, they source midwestern rye, corn, barley and wheat in addition to California grown grains. Their distillery, which was carved out of a building that originally housed an apple processing plant, features an innovative continuous micro-column still that allows for more precise cuts of the heads and tails of the distillate. And in keeping with their environmentally friendly philosophy, they distill in one pass in order to preserve both water and energy.

In honor of Sonoma County’s long history in the wine industry, they have also experimented with wine cask finished whiskeys. Moderate seasonal temperatures in west Sonoma county allow for steady and consistent barrel aging, ultimately creating a mellow well integrated final product.

Pipe Dream Bourbon:
Named for the 14th tallest tree on the planet, was Redwood Empire's first bourbon. This whiskey is made from barrels aged between four and twelve years with a high corn mash bill. The final product is smooth and complex with a slightly creamy texture, making it a true sipping whiskey.

Color: Deep Golden Hue

Nose: Assertive, fruity nose with notes of sweet maple, raw wood, maple brown sugar, vanilla, and a hint of honey.

Palate: Roasted pecan, brown sugar, pepper, vanilla, and lingering charred wood.

Finish: Moderate sweetness, baking spice, peanut brittle, oak spice, and bready notes.

Mash bill: 75% Corn, 21% Raw Rye, 4% Malt Barley

Emerald Giant Rye:
Named after the fastest growing Redwood in the world, was made with a mash-bill of 95% rye and aged for over 3 years in new charred oak barrels. This whiskey is spicy with an exceptionally smooth finish, making it a great choice in your classic whiskey cocktails.

Color: Burnt Orange

Nose; Natural rye spice aroma followed by a mix of brown sugar and cinnamon with a faint hint of pepper.

Palate: Great complexity with smooth peppery rye spice, a hint of honey, orange peel, allspice, toasted cereal, and notes of butterscotch.

Finish: Graham cracker, honey, and a sweet lingering cinnamon component.

Mash Bill: 95% Rye, 5% Malt Barley

Last Monarch blend of straight American whiskeys:
Named after the world’s largest coastal Redwood, is an award winning bourbon-rye blend with a nice balance of sweetness and spice. The blend is comprised of bourbon aged 4-12 years and rye aged 3-5 years in a variety of port, California chardonnay, and zinfandel casks.

Color: Dark Amber color with a slightly orange tint.

Nose: Complex with clove, nutmeg, rye spice, cinnamon, vanilla, orange citrus zest and butterscotch notes, and a hint of smoke and wood.

Palate: Sweet corn and rye spice combine with elements of maple syrup, vanilla and caramel corn.

Finish: Baking spice, vanilla, white pepper, caramel, and peanut brittle, rounded out by a persistent yet subdued peppery finish.

Blend: 60% Rye Whiskey (95% Rye, 5% malted Barley), 40% Bourbon Whiskey (75% Corn, 21% raw Rye, 4% malted Barley)
