PRODUCT OVERVIEW:
Long-time friends from opposite sides of The Pond, Xavier and Philip have found their true calling with the establishment of Union Sacré. Xavier is a WSET certified, enology degree holder from France, while Philip is a self-taught designer from Michigan who kind of misses living in a van.* Between the two of them, Xavier and Philip have 25+ years of experience working in Central Coast wineries. Xavier has been cellar master or assistant winemaker for some of the Central Coast's most luminous wineries. Philip cut his teeth at Proof Wine Collective.*

The "Clandestine" is aged in a combination of stainless steel and French oak for 10 months and is medium-to-full-bodied with a silky texture. Aromas and flavors of brambly blueberries and black raspberries abound. On the palate, the fruit is layered with accents of cedar, violets, woodsmoke, and black pepper. The wine finishes long with balancing acidity. It's the way Cabernet Franc should be.
