Tasting Notes:
Nose: Floral notes (rose petals, honeysuckle) with caramel, brown sugar, fresh apples, light pastry, a touch of yeast, and faint oak.
Palate: Soft, sweet and corn-forward. Honey malt, toasted grain, orange, mint, light cereal notes, subtle vanilla, and a gentle spiciness toward the finish.
Finish: Medium length, gentle drying, with oak-char, pepper, touches of vanilla, custard, and lingering sweetness.
Production & Aging:
Rabbit Hole ages Cavehill in new American white oak barrels sourced from Kelvin Cooperage. Before charring, the barrels are toasted (up to 20 minutes) to draw out deeper wood sugars. The bourbon is matured at least three years, and small‑batch blends combine no more than 15 barrels. The triple‑malted component refers to the use of three malted grains (wheat, barley, and honey malted barley) in the mash bill.
Distinctive Characteristics:
- The inclusion of honey malted barley is relatively unusual in bourbon and gives a distinctive honeyed, sweet malt character.
- The mash bill is very corn‑heavy (70%), which maintains a sweet, soft backbone, with the malts adding nuance and depth.
- The lighter, less aggressive oak integration gives it a more delicate, approachable profile compared to heavily oaked bourbons.
Ideal Serving Suggestions:
- Best enjoyed neat or with a few drops of water to open aromatics and soften edges.
- A single large ice cube is acceptable, though heavy dilution may mute its subtleties.
- Use in lighter whiskey cocktails (e.g., elevated highballs) where its nuance can shine, but avoid over‑dilution in strong cocktails.
