Tasting Notes:
Nose: Marmalade, dried fruit (raisins, cherries, plums), subtle floral notes, toffee, candied citrus peel, light oak spice.
Palate: Rich and sweet — cherry, raspberry, red fruits, caramel, vanilla, touches of baking spices, nutty almond, a faint wood char influence.
Finish: Medium length, gradually drying. Dark fruit lingers (raisins, cherry), light oak tannin, a bit of spice and bittersweet edge.
Production & Aging:
This bourbon begins as a wheated bourbon aged in new toasted/charred American oak barrels, then is rested in hand‑made Pedro Ximénez (PX) sherry casks from Spain’s Casknolia Cooperage. The finish in sherry wood imparts dessert‑wine depth and fruit intensity. The final blend is composed of no more than 15 barrels, and the whiskey is bottled non‑chill filtered to preserve its full flavor profile.
Distinctive Characteristics:
- The PX sherry finishing greatly amplifies the dried fruit, dark berry, and dessert‑wine character, giving it a “sherried” overlay not common in standard bourbons.
- The wheated mash bill softens the edges and integrates well with the sherry influence, smoothing the transition between bourbon and finishing wood.
- Despite a relatively modest proof, it remains full in expression and quite approachable, with a balance between sweet fruit, oak, and spice.
