Tasting Notes:
Nose: Dark chocolate and cocoa powder lead, followed by roasted chestnuts, leather, orange peel, and subtle lavender. Vanilla and toasted sugar come through with a hint of smoke.
Palate: Rich and full-bodied with chocolate, espresso, roasted nuts, caramel, molasses, and baked apple. Spice builds with notes of black pepper, clove, and cedar.
Finish: Medium to long with lingering cocoa, oak, and warming spice. Some barrels finish drier with a bitter chocolate edge, while others have a slightly sweeter fade.
Production & Aging:
This is a single barrel, cask strength version of Rabbit Hole's Cavehill four-grain bourbon. Aged approximately four years in Kelvin Cooperage barrels that are toasted and charred. Each barrel is selected and bottled without dilution, showcasing unique variations in flavor and character.
Distinctive Characteristics:
Bold dark chocolate and roasted nut notes dominate, offering a deeper, more intense profile than the standard Cavehill. Subtle floral and citrus notes add complexity. Each barrel has its own signature, with flavor variations that highlight either sweetness, spice, or fruit.
Ideal Serving Suggestions:
Best enjoyed neat or with a few drops of water to unlock its aromatic complexity. Pairs well with desserts like dark chocolate or pecan pie, and complements smoky grilled meats. For cocktails, it's best suited for robust, spirit-forward recipes like an Old Fashioned where the bourbon can take center stage.
