PRODUCT OVERVIEW:

For four generations Ca’ del Baio has been a family affair, as is the tradition in the Langhe. Nurtured and passed down from father to son, the vineyards surrounding the Grasso family farmhouse have been added to over time through marriage and acquisitions.

Today it is Giulio and Luciana who, together with their daughters Paola, Valentina and Federica, handle all the various areas of the business with passion and expertise, from the growing and vinification of the grapes, to hospitality and sales.

For the Grasso family, simplicity, a sense of sacrifice and the deep attachment they have to their land are pre-requisites for guaranteeing wines of quality.

Today the Ca’ del Baio estate takes in 28 hectares of vineyards in the villages of Barbaresco and Treiso. Crafting wines exclusively from estate owned vineyards, the vines utilized in crafting the Cru Asili range between 25 and 40 years old.

In the winery the Nebbiolo fruit is destemmed and pressed grapes allowed to ferment on the skins in heat-controlled steel tanks for 5 to 30 days. The wine then matures in wood for 24 months, partly in oak casks and partly in small French barrels, before continuing its ageing in the bottle for 6 months. 

Winemaker Giulio Grasso prefers to use native yeasts in the fermentation of each of his wines in order to allow them to express their potential to the fullest. Giulio also limits the use of sulphur dioxide to the absolute minimum in order to ensure that his wines will age correctly.
