Gran Passione, a blend of Corvina and Merlot, crafted in the tradition of “Apassimento” (to dry and shrivel), the same style as Amarone wines of the region. This technique has its roots in an ancient past dating back to the Roman era. Over the centuries, this technique of “drying” the grapes before crushing has been honed, resulting in this unique expression of northern Italy. The grapes are hand-selected and harvested at the beginning of October to achieve the highest sugar content. After drying on the vines for about 15 days, they are pressed and the fermentation starts; the skins are left in the must for a period to extract and intensify the flavors. The wine is then staged in oak vats for about 3 or 4 months;* this restrained use of oak adds complexity without making it too heavy, and all those generous fruit characters take center stage on the palate.
The 2018 Gran Passione Rosso Appassimento is full-bodied and loaded with flavors of cassis and black raspberry. These primary fruit flavors are layered with accents of vanilla, baking spice, and hints of black pepper.
Vibrant acidity emerges on the long and satisfying finish, keeping this substantial sipper light on its feet.
