The 2021 Knorhoek Cabernet Sauvignon is sourced from vineyards located in the foothills of the Simonsberg Mountain, where the highly oxidized, well-drained soils and the north-facing hills cooled by the Atlantic sea winds bring forth slow-ripening grapes that strike the perfect balance between sugar and acidity. Blended with 3% cabernet franc and aged for 2 years in a combination of new and seasoned oak barrels, it has aromas of red berries, cranberries, and cassis, with layers of cherries, flint, and leather. The palate reveals juicy dark fruits and ripe plums, wrapped in soft velvety tannins for a refined texture. The wine's harmonious balance shines through, combining its youthful exuberance with nuanced complexity.
