The Zealandia Pinot Noir is the successor to Theo Coles’ Wholebunch Pinot and reflects willingness to reevaluate, change, and experiment. Though grown from the same two sites and terroirs, the fruit is now fully de-stemmed and fermented in amphorae.
Macerated for six weeks with a single punchdown, then aged further in amphorae. Unfiltered, unfined, and with a small (20ppm) SO2addition prior to bottling. Where the Wholebunch delivered undeniable sensual gratification, Coles feels that his winemaking adjustments for the Zealandia have resulted in a wine that touches a deeper, more grounded, more energetic place.

Theo Coles' Hermit Ram label is something of a wine phenomena, with allocations eagerly sought around the world.
