The Guibert family was one of the first to establish a presence in Languedoc-Roussillon with their flagship estate, Mas de Daumas Gassac, in 1971. Véronique and Aimé Guibert made history in 1978 with their inaugural vintage of the Mas de Daumas Gassac Rouge. This wine made it known that Languedoc-Roussillon can bring forth compelling wines that are on par with those from more well-known regions throughout the world.

Moulin de Gassac is the Guibert family's second winery, established in the early 1990s when Aimé Guibert discovered an amphitheater-shaped area in the village of Villeveyrac in Pays d'Hérault with an exceptional terroir. Already planted to vines by local farmers, Guibert entered into a partnership with them, purchasing their exceptional fruit and crafting wines under Mas de Daumas Gassac supervision. Both wineries are currently managed by Aimé's sons, Samuel, Roman, Gaël, and Basile Guibert.

The 2023 "Guilhem" Rosé is a blend of grenache and cinsault that beguiles the senses with aromas of wildflowers and red fruits followed by a palate redolent with flavors of strawberries, white peaches, raspberries, and pomegranates leaves with hints of flinty minerality and vibrant, lip-smacking acidity.
