Philippe Collin, a Champagne native and part of a multi-generational winemaking family, wanted to establish his own domain, but opportunities in his native region were very limited, not to mention expensive. A true terroir aficionado, he moved to Limoux in Languedoc-Roussillon, where he saw vast potential in the land's high-elevation and gravelly soils to make great bubbles. Indeed, his vineyards, planted to chardonnay, pinot noir, and chenin blanc, bring forth wines that are pretty spectacular!
The Domaine Collin Crémant de Limoux Cuvée Tradition, a blend of chardonnay and chenin blanc, has aromas of green apples, pears, and citrus fruits, complemented by subtle notes of wet stone. The palate is crisp and lively, featuring flavors of apples, lemon zest, and a hint of brioche. The wine's balanced acidity juxtaposed against its creamy mousse enhances its complexity.
