PRODUCT OVERVIEW:
This special bottling of Comisario's Ultra Premium Blanco, crafted for the celebration of the Mexican holiday "The Day of the Dead" on November 1st-2nd ships in a beautiful bottle with eye catching, holiday-appropriate graphics. In fact, shipping delays this past Fall resulted in the late arrival of this tequila at our local distributor... arriving after the Dia de Los Muertas holiday. This is how opportunity knocks... Upon being presented with a sample of this Premium Blanco we knew right away that it would make for a perfect Bin Ends Artisan Spirits Feature.

Tequila Comisario is an homage to “The Commissioner”, a government official who had shielded tequila producers in the 18th century from King Charles III of Spain, who controlled Mexico at the time. The king had banned production of tequila because he feared that its flourishing success would cut into sales of Spanish wine and spirits. The people living in the area above Guadalajara defied his decree of prohibition and continued tequila production in distilleries masked by the hills of the area. Upon the approach of King Charles’ men, the Commissioner would raise the alarm to the people working in the distilleries. Hopefully, they rewarded him with some tequila from time to time.

Meticulous care is taken in cultivating estate grown 100% pure Blue agave from the mountains of the Highland Region around Los Altos, working solely with plants that are seven or eight years old. The rich red clay soil and cool climate allow agave to flourish, resulting in a fruitier style of tequila.

After harvest, the piñas, which are the succulent core of the plant, are transported to distillery NOM 1529 where they are slow cooked for eighteen hours in a high pressure autoclave. The agave is then crushed by an automated roller mill, which mashes the hearts through grinding wheels, separating the fibers from the juice. Roller mill extraction tends to produce tequilas with herbaceous flavors more so than the earthy flavor profiles of tequilas crafted utilizing techniques such as wooden mallets or massive two ton volcanic stone wheels. Double distillation, which is mandated by law, is carried out in copper pot stills, producing a crisp and clean final product.

This excellent blanco tequila is passionately produced by highly skilled distillers and agave farmers with generations of experience passed down their tequila lineage. The Aceves brothers (Jose & Cesar) are the latest generation of Master Distillers formulating and producing intricate and nuanced tequilas that represent an amalgamation of their family heritage with modern innovation.
