PRODUCT OVERVIEW/REVIEW:
While the majority of Prosecco is made in the DOC production zone bearing its name and spanning large swaths of the Veneto as well as parts of Friuli-Venezia Giulia, the best Prosecco is made in Conegliano Valdobbiadene, a hilly area in the Veneto situated 30 miles from Venice and about 60 miles from the majestic Dolomites. Within this region exists Conegliano Valdobbiadene Superiore DOCG, an area comprised of 15 communes considered to produce wines of even higher quality.
Established by Abele Adami, the Adami winery has become synonymous with top-notch Prosecco since Abele made the decision to craft the first single-vineyard Prosecco - producing the first vintage of the Adami "Vigneto Giardino" Valdobbiadene Prosecco. Since then, with the acquisition of more prime vineyard holdings by Abele's son Adriano, Adami has grown its portfolio of wines, all of which transcend the category.
Today the company is in the hands of the third generation of Adamis, Adriano’s sons Armando and Franco, both winemakers (with the fourth generation now in training). The winery now produces more than 60,000 cases of sparkling wine from 125 acres of vineyards. Using a combination of conventional and organic farming methods, the Adami brothers believe that by practicing sustainable viticultural methods they will achieve the best results in their finished wines and protect the environment.*
In the winery, Adami goes extra lengths to deliver vibrant, elegant Proseccos. To maintain maximum freshness, the wines are given their second, sparkle-inducing fermentation in small batches rather than all at the same time soon after harvest. The base wine for the Prosecco receives extended aging on the lees after the initial fermentation to add progressively more body and richness, until finally undergoing second fermentation in more than 100 individual batches throughout the course of a year. All bottles note the month and the year of the second fermentation on the label. It is this sort of exceptional attention to detail that makes Adami the benchmark for Prosecco today.*

91 points, Vinous:
"The NV Valdobbiadene Prosecco Superiore Dei Casel lifts up with poise and precision, displaying dusty dried flowers, young pear, and hints of white smoke. It impresses with a lovely inner sweetness, balanced by zesty acids and hints of spice. Seamless is the word that comes to mind, as this travels across the palate with creamy textures; yet it then resolves into a classically dry expression through the finale. You'll be hard-pressed to stop after just one glass."
