PRODUCT OVERVIEW:
Breaking and Entering American Whiskey is the second release under the B&E label, sourcing bourbon and rye from Kentucky and Tennessee which head distiller and blender Dave Smith has combined with their own California malt whiskey. The final blend defies bourbon or rye categorization, as the mash is ultimately composed of close to equal parts of rye, corn, barley, and wheat.
The brand name Breaking and Entering is based on the specious notion that they’re actually stealing the sourced bourbons used in the distillate. The final product is a unique blend of a fine variety of whiskeys laid down in new and old casks previously used to age bourbon, rye, and malt whiskies, resulting in an American whiskey that is even better than the sum of its parts.
St. George was founded by a German distiller in California in 1982 as one of the first artisanal distillers in the country. His first hire was a brewer and former nuclear scientist. In less than four decades, they have established a remarkable non-nuclear arsenal of products, including four gins, three vodkas, three whiskeys and a bevy of eau de vie made from locally cultivated produce.
The in-house whiskey program began in 1996 when they started laying down barrels for the St. George Single Malt Whiskey, and now includes their Baller Single Malt Whiskey as well. St. George takes an artisanal approach to all of their spirits, working with copper pot stills that allow a great deal of character and flavor to shine through in the final distillate.
St. George is wholly dedicated to experimenting with distillation in all of its forms, so much so that they only release spirits that they believe have something new and exceptional to contribute to the diversity of the market. They claim that they can’t dance quite as well as Jennifer Beals in Flashdance, so they choose to express their passion for the arts through the distillation of artisanal spirits. What a feeling.
Breaking and Entering American Whiskey is a nuanced, bright and delicate 86 proof whiskey. The diverse mash bill has created a balanced product with great middle ground sweetness. The smooth texture and dynamic flavor profile make this a great whiskey on its own or in any classic cocktail you’d normally make with bourbon or rye.
