The 2025 Domaine Denizot "Osmoze" Sancerre is sourced from vineyard sites with 95% limestone and 5% Kimmeridgian marl. Fermented with native yeasts and aged for one year on the lees in stainless steel, concrete, and truncated conical oak tanks, it has enticing aromas and flavors of pink grapefruit, lime zest, green apples, and pears, with touches of passionfruit and papaya. The fruit characters are laced with subtle notes of elderflower and fresh-cut tarragon. The palate is lushly-textured thanks to the lees aging, and is cut with vibrant, mouthwatering acidity. Wet slate, gunflint, and a saline lift appear on the mid-palate and bring the wine to a long finish. THIS is what great Sancerre should taste like!
