Introduction: Maison Joseph Drouhin is one of Burgundy's most storied family houses, and their Chablis operation — headquartered at the 18th-century Moulin de Vaudon on the banks of the Serein River — is widely regarded as one of the appellation's finest estates. The Drouhin-Vaudon Chablis Premier Cru is a benchmark expression of the style: a harmonious blend of four distinct Premier Cru parcels, each vinified separately and assembled to create something greater than the sum of its parts. It is precise, mineral-driven, and unmistakably Chablis.

Terroir: The Premier Cru parcels — Roncières, Mont de Milieu, Montée de Tonnerre, and Moireins — sit on both sides of the Serein River in the heart of Chablis' most prestigious growing zones, just below the Grand Cru hillside. The soils are classic Kimmeridgian limestone, an ancient marine sediment packed with tiny fossilized oyster shells that have been imparting Chablis' signature saline minerality for centuries. The cool, continental climate of this northernmost Burgundy outpost preserves the naturally high acidity that defines the appellation and gives the wines their legendary capacity to age. The estate has practiced organic and biodynamic viticulture since the late 1980s, making Drouhin-Vaudon the largest fully biodynamic estate in Chablis.

Appearance: Brilliant pale gold with vivid green-tinged highlights, showing exceptional clarity and a light, elegant viscosity in the glass.

Nose: The aromatics are pristine and classically Chablis — lemon zest, green apple, white grapefruit, and a gentle floral lift of acacia, underscored by a characteristic savory note of fern and a cool, oyster-shell minerality that immediately announces the appellation. The 2022 vintage adds a touch of ripe stone fruit and delicate spiced pastry notes that give the bouquet a little extra generosity without sacrificing focus.

Palate: Dry, medium-bodied, and impeccably structured, with flavors of citrus pith, green apple, ripe pear, and a briny mineral salinity that threads through from entry to finish. The acidity is bright and precise — firm without being sharp — providing excellent tension and a clean, mouthwatering texture. The 8–10 months of lees aging in stainless steel add a subtle creamy roundness and depth that fills out the mid-palate beautifully while preserving every bit of the wine's crystalline freshness.

Finish: Long and mineral-driven, with a persistent fade of lemon, wet stone, and a faintly honeyed quality that emerges as the wine opens in the glass. The finish is clean, bracing, and deeply satisfying — exactly the kind of aftertaste that makes you reach for the next sip.

Food Pairings:
🥩 Meat: Pan-roasted halibut with beurre blanc, poached lobster with tarragon, or roasted chicken with herbed cream sauce.
🥦 Vegetarian: Leek and gruyère tart, white asparagus with hollandaise, or a classic Burgundian gougère platter.
🧀 Charcuterie Board: Fresh oysters, Époisses or aged Comté, sourdough crackers, and a light scattering of cornichons.

Overall Impression: The 2022 vintage was particularly generous for white Burgundy — ripe, aromatic, and texturally rich while retaining the structural backbone needed for aging — and the Drouhin-Vaudon Premier Cru captures that balance beautifully. With an optimal drinking window of 2 to 6 years and aging potential up to 8, there is plenty of time to enjoy this wine at various stages of its evolution. Serve at 52–54°F (12–13°C); drink now through 2028–2030, with the mineral complexity likely at its peak in the next 2–3 years.
