PRODUCT OVERVIEW:
Saint Hilaire is a small village located in the Gard, a department situated between the appellations of Châteauneuf-du-Pape and Costières de Nîmes. In 1929, the village's grape farmers formed a coop in order to create a sustainable business model for wine production. The coop's wines were of such high quality that they officially became part of the Côtes du Rhône appellation in 1956.
René Blisson is the current winemaker for the coop and follows his predecessors' dedication to sustainable farming practices and high quality.
The wine is a blend of 70% grenache and 30% syrah. Medium-to-full-bodied, it has aromas and flavors of red and black fruits tinged with hints of savory herbs, baking spice, and wet stone. Pliant tannins and moderate acidity add balance and bring the wine to a long finish.
