Bayed in Aÿ, Bollinger was founded in 1929 and is one of the most famous producers in Champagne. It is known for its rich, complex, toasty wines, thanks to its Pinot Noir-dominant blends and its traditional oak barrel fermentation. Today's offer epitomizes the decadent house style.
The "Special Cuvée" has been Bollinger's flagship wine since 1911. Named so because Georges Bollinger, proprietor at the time, did not think that "NV Brut" reflected its superior quality, it is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as required by appellation regulations. The wine has aromas of baked apples, peaches, and toast followed by a full-bodied palate of ripe pears, brioche, baking spices, and fresh walnuts. It is a seamless blend of structure, depth of flavor, and vivacity.
