Winemaking Techniques: Hand-harvested grapes are selected in the vineyard and transported to the winery in 15 kg boxes during the early morning to maintain low temperatures. Fermentation is spontaneous, utilizing native yeasts without the addition of enological products. Approximately 25% of the grapes undergo carbonic maceration with whole clusters, while the remaining 75% are gently crushed and fermented in stainless steel tanks with temperature control. Post-fermentation, the wine is pressed and aged for six months in a combination of clay amphorae and used 300-liter French oak barrels. The wine is naturally clarified and stabilized, bottled without filtration, and contains very low levels of added sulfites.
