Production & Aging

Penelope Architect is a four-grain straight bourbon whiskey, uniquely blended from three bourbon mash bills. It is aged for 4 to 5.5 years in new American oak barrels with #4 char staves and #2 char heads. The bourbon is then finished with French oak staves, selected in collaboration with Tonnellerie Radoux of France using their OakScan® process to achieve a precise flavor profile. This finishing process imparts additional complexity and depth to the whiskey.
