Production & Aging
Baby Jane Bourbon is crafted using a proprietary heirloom corn variety developed by Widow Jane, known as "Baby Jane," a hybrid of Bloody Butcher and Wapsie Valley corns. This non-GMO corn imparts unique depth, sweetness, and creamy spiciness to the bourbon. Distillation occurs both at Widow Jane's facility in Brooklyn and in Kentucky. The bourbon is aged for under two years and is non-chill filtered, preserving its natural flavors. It is proofed with mineral-rich water from the legendary Rosendale Mines of New York.
